Game Day Potato Salad

This is a recipe that I learned from my mother. And it's been my favorite ever since...



Potato Salad

- 6 sml-md potatoes( washed, peeled and cubed)
- 3-4 pickles, chopped
- 6-8 eggs, chopped
- 1 cup of mayonnaise, more or less to your taste
- 1 tbsp of mustard
- 1 onion, diced (optional)
-Salt and pepper

• Boil potatoes and eggs together until potatoes are fork tender 15-20 minutes

• drain potatoes and peel eggs

• combine potatoes, chopped pickles, chopped eggs, diced onions, mayo and mustard together till everything is well coated

• add salt and pepper to taste
